Weekend To Dos 6/9-10 & Menu Plan 6/10-16


The To Do list this time is a short one since my bestest friend B is coming for a visit this weekend!  Wahoo!  There will be lots of laughing, drinking of wine, eating of snacks and general hanging out and being silly.
  1. Farmer's Market
  2. Strawberry Picking (the u-pick places are finally open)
  3. Grocery, Laundry, Cleaning
  4. Finish Fence Slat hanging garden
  5. Get hanging baskets and flowers
  6. Plant flowers in pots
  7. Willow to the dog park
That's it!

I have already written all most of the posts for the coming week so this should be a fun and relaxing weekend hanging out with B and D and Willow.  I will definitely need all this rest since we have big plans outside for next weekend that involves quite a bit of manual labor.


This is an easy menu plan week.  D will be busy with work and school so things need to be quick and easy.

Sunday:  Crockpot BBQ chicken on buns with fruit salad and cole slaw
Monday:  Stovetop Taco Pasta
Tuesday:  FITF
Wednesday:  Orange chicken with steamed veggies and rice
Thursday:  Chipotle Burritos
Friday:  FITF
Saturday:  Grilled cheese sandwiches, chips and a salad

Tout It Tuesday - #9

Scicilian Seasoned Salmon with Cheddar Mornay Sauce


This dish is one we came up with after buying some amazing fresh dried pasta at the farmer's market.  This is another dish that is all D.  He came up with the flavor profile since he wanted something to compliment the Gruyere and Roasted Onion pasta with out over powering it.  Luckily we have a Penzeys addiction and he was able to find something in our spice stash that would work.

Personally, I think adding the sun dried tomatoes was a stroke of genius.  It added just a hint of sweetness to the sauce which helps to balance the sharpness of the Irish Cheddar and the saltiness of the Parmesan.  This is definitely staying in the dinner rotation and we are stocking up on the pasta so we always have some in the pantry.

Additionally, we are now hooked on this idea of fresh dried pasta.  I am thinking we may have to try our hand at making some of our own soon.

I hope you enjoy this dish as much as we did.  

Ingredients
Salmon
Mornay Sauce
  •  3 T Butter
  • 3 T AP flour
  • 1 1/4 C chicken stock
  • 1 1/4 C heavy cream
  • 1/2 C grated Irish cheddar
  • 1/4 Parmesan cheese
  • 3 sun dried tomatoes
  • 1 t Sicilian Salad Seasoning
  • 1 t garlic powder
  • 1/2 t powdered rosemary (we ran dried chopped rosemary through a coffee grinder we use for grinding spices)
Fresh Pasta - We got some amazing roasted onion and gruyere pasta at our local farmer's market

Directions

Salmon
  • Turn oven on to 350 degree
  • Line a baking sheet with foil
  • Place rinsed and dried filets skin side down on the foil
  • Brush with olive oil and sprinkle quite liberally with Sicilian Salad Seasoning
  • Bake in oven for 10-15 minutes.  Fish should flake when pressed gently with a fork. (While the salmon is baking you can make the Mornay Sauce and boil the pasta)
  • Run a large offset spatula between the skin and fillet. The skin should stick to the foil so you don't need to worry about removing it while eating.
  • Cut in half
Mornay Sauce
  • Heat butter in sauce pan over low heat until it melts
  • Stir in flour, and cooking for 2 minutes
  • Add chicken broth and cream, give a good stir and reduce the heat
  • Add the sun dried tomatoes, garlic powder, powdered rosemary and Sicilian Salad Seasoning
  • Reduce heat to low and simmer
  • Add cheese and stir until melted
  • Blitz with a stick blender
  • Simmer for another 3-5 minutes until it thickens slightly
Pasta
  • Prepare according to package directions
To Serve
  • Place pasta in bowl and pour Mornay sauce over top to coat
  • Place salmon fillet halves on top of pasta
  • Drizzle with a spoonful or two of Mornay Sauce
  • Garnish with chopped parsley if desired

Weekend To Dos 6/2-3 & Menu Plan 6/3-9


Our To Do list this week is easy.  It is everything that didn't get done last weekend.  As you may have seen in my Kitchen Update Gone Awry post, our mini kitchen update took longer than we thought it would (I know, put on your shocked face) so we didn't get everything done.  Add that to the fact that the weather here has been dreadful, cold and rainy, most of the week so we weren't able to get caught up.  Oh well, such is the nature of the To Do list, right?
  1. Work on touching up paint on walls
  2. Farmer's Market
  3. Purchase flowers and hanging baskets
  4. Pot up flowers
  5. Grocery, Cleaning, Laundry, Bank
  6. Do test area by oven on the counter top paint
  7. Fire up the grill
  8. Order more bark (yeah, I can't believe we need more either, but we didn't have enough left over to finish in the garden.)
  9. Patio furniture from basement
  10. Apply teak oil to the Adirondack chairs
  11. Finish Fence Post Planter 
  12. Family Dinner
  13. Blog posts - photos and write ups



Last week was a total fail on our following our menu plan.  We ended up working late or getting invited out to dinner several times.  Then on Friday, some good stuff happened at D's work so we went out to celebrate.  This means that basically everything is back on the list for this week.

Willow Wednesday Plus Info on the Group We Adopted Her From

D and me on the day they brought me home.
This week, in addition to the usual photo of our sweet Willow, I thought I would take this opportunity to share a little bit about the group that we adopted her from, Refurbished Pets of Southern Michigan, or RPSM for short.

Before I begin I have to say that we could not have ended up with a better dog for us. Willow is a total sweetie and after less than 2 years of her being a part of our little family, I can't imagine life without her.  Sure, we would probably be farther along in our home renovations and furniture projects but we consider the hours spent with her at the dog park, snuggling on the couch and wrestling on the floor time VERY well spent.  And there is nothing better than coming home after a not-so-great day at work to a wiggling dog who is so happy to see you!

We know much of her amazing personality comes from her sweet and loving nature (unless you are a rodent in her backyard, then all bets are off) but she was also helped by this great group, RPSM, and the training she received while in their care.  Of this I am absolutely convinced.

RPSM takes dogs from shelters and tests them for temperament, trainability, and adoptability. They then put the dogs into a 12-week training program to get them ready for adoption.  Here is the best part, and what makes this group so special, they have partnered with the local prison and it's the inmates who train the dogs getting them ready for their canine good citizen certificate (CGC).  This is why we think this is such a great program.  The inmates help the dogs and the dogs help the inmates.  I think they call that a win/win!

Once we were approved to adopt Willow, we received a series of weekly reports filled out by the trainers so we could get an idea on how her training was going, what she was learning and a bit about her personality.  The reports also included info on how much food she was getting, what kind of food she was being fed, when she was getting her flea and tick treatments, when she got her heartworm pill and if there were any health or behaviour issues that week, etc. This helped us immensely when we brought her home!

When Willow came to us she was house broken, crate trained, knew basic commands and knew a bunch of tricks.  We knew that she was VERY food motivated and eager to please.  Getting these type of reports is unusual from what I can tell but this is just one more way that RPSM shows what an outstanding group they are.

The adoption rates are very reaonable for RPSM dogs, especially considering that they are fully vaccinated, spayed or neutered prior to enrollment in the training program.  They also microchip the all the dogs, which helps with piece of mind in case a fur-kid gets lost.  At our initial visit with our hometown vet clinic, the vet was impressed with Willow's care and condition as well as how she was so well behaved. 

So if you, or someone you know, are looking to adopt a dog and live close to southern Michigan, please refer them to RPSM and their dogs. 

Additionally, the inmates love to knit and crochet.  These items are sold on ebay to raise funds for RPSM and the dogs.  So if you live far away but still would like to support this great organization, this is an opportunity to do so.
