Chicken, Pepper & Mozzarella Panini


D and I got as Cruisinart Griddler a couple of years ago when it was on discount at Costco. We just love it!  It has seriously become one of our favorite kitchen gadgets mainly because we love things like grilled cheese and paninis. With this, we can whip some up in a few minutes. Cleanup is quick and easy since the plates can go right in the dishwasher.  D got the waffle plates for his birthday so now we can use it for breakfast too.

This panini is one of my favorites.  It is quick, easy and, at least to me, a tasty treat.

Chicken, Pepper & Mozzarella Panini

Ingredients
2 slices bread
Butter
Chicken breast - sliced into thin strips
Sweet peppers (I used yellow and orange) - sliced into thin strips
Shredded mozzarella cheese
Italian herb seasoning
Smokey seasoned salt - I like this one from Penzeys

Directions
Turn on the Griddler/Panini press to medium/medium high
Butter the bread lightly on each side
On one half place sliced chicken
Sprinkle with Italian herbs
Sprinkle with shredded mozz
Top with seasoned salt
Place with pepper on top
Sprinkle with more mozz cheese
Place other piece of bread on top
Place on Griddler and cook until done

Slice in half and enjoy!!
